that I enjoyed while growing up in England.

Shepherd's pie

A favourite with children and adults alike, Shepherd's pie is an ideal way to use leftover meat.

Serve this nourishing dish with buttered Brussels sprouts.

6 tablespoons butter
2 medium-sized onions, finely chopped
2lbs cooked ground/minced lamb or beef
2 tsp salt
1 tsp black pepper
1 tsp dried mixed herbs
2 tsp Worcestershire sauce
1/4 cup beef stock
3 lbs potatoes, cooked, mashed, and kept warm
1/4 cup milk
2 parsley sprigs

Preheat oven to 200c/400F

In a large saucepan, melt 2 tsps of butter over moderate heat. When the foam subsides, add the onions and cook, stirring occasionally, for 5-7 minutes or until the onions are soft and translucent but not brown. Stir in the meat, half the salt and pepper, the herbs and Worcestershire sauce and cook for 5 minutes, stirring frequently. Stir in the stock and remove the pan from the heat. Transfer the meat to a shallow ovenproof dish and set aside.

Place the potatoes in a large mixing bowl and, using a kitchen fork, stir in 2 tablespoons of the remaining butter, the remaining salt and pepper and the milk. Beat the potato mixture until the ingredients are thoroughly combined. Spoon the potatoes over the meat in an even layer. Using a fork, draw decorative lines over the potatoes.

Cut the remaining butter into pieces and dot them over the potatoes. Place the dish in the center of the oven. Bake the pie for 25-35 minutes or until the potatoes are golden brown.

Remove the pie from the oven. Garnish the top with the parsley sprigs. Serve immediately and enjoy!


Toad in the hole

A very popular British dish, Toad in the hole makes an very economical lunch or evening dish

Serve it with a green vegetable such as cabbage or broccoli.

1 tablespoon vegetable fat
1lb pork English sausages, skinned
Batter
4oz flour
1/4 tsp. salt
1 egg
11/4 c Milk
Preheat oven to 220 c / 425 F
First, make batter . Sift flour and salt into medium sized
mixing bowl . Beat in the egg and gradually beat in just
enough milk to form a stiff, smooth batter. Let mixture
stand for 5 minutes, then gradually add the remaining milk
beating constantly. Cover bowl and set aside.
Place vegetable fat in a medium baking pan and place in
oven. When the fat has melted remove the dish from the
oven and place the sausages in the dish. Return dish to
the oven and cook the sausages, turning them
occasionally, for 10 to 15 minutes or until they are crispy
and brown. Remove dish from oven and pour batter over
sausages. Bake for 30 minutes or until batter is golden
brown. Remove and serve.
